Pizza with Homemade Pizza Crust, Salad with #rsgetrecipe.name#

What is the first food that comes to mind when you mention Kids' Meals? Pizza! We will show how to make a pizza crust and top it with lots of fun toppings. You will learn cooking techniques in the process such as how to make GF crust and roasting. This is a fun way to encourage everyone in your family to express themselves creatively.

Pizza:
Cut your favorite vegetables for toppings such as Green Peppers, Mushrooms, Onion and/or Eggplant.  To roast: spray oil on a baking sheet.  Place vegetables on the sheet.  Salt and spray oil on top of vegetables.  Bake at 425 degrees for 20 minutes.
Pizza Crust:
Dry Ingredients:
1 1/4 cups brown rice flour
1 1/4 cups tapioca or cassava flour
1/2 cup corn or potato starch
1/4 cup almond meal or sorghum flour
1/4 cup golden ground flax seeds
2 tablespoons yeast
1 1/2 teaspoons salt
2 teaspoons xanthan gum
Combine dry ingredients in a separate mixing bowl and whisk until incorporated.

Wet Ingredients:
1 1/2 cups water
2 tablespoons olive oil
2 tablespoons honey
1 tea apple cider vinegar
Combine in glass container and heat in microwave to about 115 degrees.  Add:
1 teaspoon agar agar powder
Let sit for 1 minute and then stir until agar is melted.
Add dry ingredients to wet ingredients and mix with an electric mixer for 1 minute on high.  Oil pizza baking pan(s).  Oil hands.  Press dough into pans.  Pre-bake the crust at for 10 minutes at 425 degrees.

Top pizzas with baked vegetables, and other toppings such as shredded non-dairiy “Mozzarella” style cheese, Italian sauce, green and black olives, sliced fresh tomatoes, processed broccoli, shredded zucchini, sun-dried tomatoes etc. and bake 20 more minutes at 425 degrees. 

Salad with Ranch Dressing:
Mixed Greens
Ranch Dressing:
2 tablespoons soy or avocado mayonnaise
2 tablespoons rice milk
1/2 teaspoon apple cider vinegar
2 tablespoons tofu
1 1/2 teaspoons olive oil
1/2 teaspoon ume vinegar
1/2 teaspoon dried parsley
1/4  teaspoon onion powder

1/8 teaspoon garlic salt
1/8 teaspoon freshly ground pepper

Place ingredients in a small food processor or a blender.  Blend until smooth. Toss with salad and serve with pizzas.
