CENTENNIAL, CO Eighty million Americans may have some form of gluten
sensitivity and few are diagnosed. One in every four Americans cannot digest
dairy products yet most processed foods contain gluten and/or dairy. As baby
boomers age, more and more will be urged to avoid grains containing gluten and
the protein casein found in dairy products. So, whats for dinner?
Cooking without gluten and/or dairy is different and requires learning some
new techniques. The Alternative Cook offers fun-packed, instructional DVDs to
show how to cook without gluten and dairy focusing on whole, unprocessed foods,
primarily using beans, grains, vegetables, fruits, nuts, and of course,
chocolate. Ms. Duane shows how to prepare easy meals with alternative
ingredients that rival those made with traditional ingredients. The beautifully
produced DVDs and video streams have been deemed a relief to those devastated by
the news of a life-altering, restrictive diet. And the light-hearted music and
demonstrations make gluten-free, dairy-free cooking an epicurean adventure to
look forward to.
Each DVD demonstrates how to cook flavorful meals from around the world and
for various occasions. Mexican, Italian, Chocolate and Kids Meals are currently
available. Other themes including Japanese, Chinese, Middle Eastern, Thai, Fast
Food, Baking 101, Breakfast, Road Food, Cookies, Dinner Party, and Desserts will

Ms. Duane is a guest cook on several episodes of PBSs TV show "Life Wise" in
the 2007-8 season and is featured on Comcasts Colorado Video on Demand (Your
Colorado > Healthy Living). She was awarded the Kiplinger / Dream in You
Dream Job Contest. Out of 3,500 entries, Ms. Duanes essay and video clip were
chosen as one of three winners in April 2006. Her prize includes mentoring from
Food Networks Paula Deen and a guest spot on "Bringing it Home" with Laura
McIntosh. Ms. Duane was also featured in the July and November 2006 issues of
Kiplinger Personal Finance Magazine and in the April, 2006 Centennial Citizen.

Jean earned her MBA from the University of Colorado and spent the bulk of her
career writing business plans. After struggling for years with her own dairy and
gluten intolerances, she decided to write a plan for a business of her own
and launched Alternative Cook, LLC. She honed her skills at cooking school
and studied a variety of cooking methods. "I just want to help others with food
intolerances," said Ms. Duane.
